Entirely handmade and knife-cut Tuscan pici, crafted with organic Italian wholegrain semolina following traditional methods. Served with a slow-cooked Cinta Senese DOP ragù from Bezzini Farm in Simignano (since 1890) and organic Tuscan tomato.
(Cinta Senese: a historic native Tuscan black pig breed, considered among the finest in the world for its depth, elegance and intensity of flavour.)
